VINIFICATION
Pellicular maceration and soft pressing; the resulting must is then placed directly into an autoclave for the sparkling process for approximately 60 days; it then rests on its own yeasts for another 120 days or so.
Organoleptic Properties
Appearance: straw yellow color; creamy and bright foam; silky perlage with a texture of fine bubbles.
Aroma: delicate and intense, revealing immediate hints of white fruits and citrus, accompanied by pleasant floral sensations and a mineral undertone.
Taste: fresh and savory, with excellent volume and balance, creating a highly enjoyable experience.
Aftertaste: intensifies and lingers with the fruity and floral notes from the bouquet, leaving a persistent finish.
